"Squirrel" Red Snapper

 Over the past few weeks I was experimenting with different fish preparations. We have been having a nice selection of fresh day boat fish in the restaurant lately and this dish was inspired by Susanna Foo. I found this in her cookbook, Susanna Foo Chinese Cuisine. Cuban Revolution @American Tobacco campus.

After the game we went to Cuban Revolution Restaurant and Bar. Thursday night they have salsa dancing. The restaurant is located in the beautiful American Tobacco district right under the Lucky Strike water tower. We ate outside in the courtyard and enjoyed the lazy river water feature that runs the length of the complex.  I had the Picadillo a delicious mixture of ground beef, raisins, almonds and Spanish olives serve over white rice and accompanied by maduros, a ripe sweet fried plantain, and bread. Deanna had the Arroz con Pollo wrap, seasoned rice and chicken wrapped up in a tortilla with lettuce and tomato. We share a plate of maduros. Everything was great, the staff was friendly and food was delicious. We took home some gelato although I doubt that either one of us will be able eat anything else. After dinner we walk around the American Tobacco complex to walk off our meal.

Lan's cooking school and Oriental gift shop.

Every time I go to this shop I always walk away happy with my visit. The owner is very friendly and helpful. Definitely worth the time.

I went to the Asian market at Brier Creek and bought some baby bok choy. Here it is sauteed with some olive oil, lots of garlic and some chicken stock. Sometimes simple preparation is the best.
